底泥啤酒酵母分离纯化与发酵性能测定

摘要 以生产型实训基地原浆啤酒底泥为原料,从中分离筛选出一株高活性啤酒酵母,并对其进行啤酒发酵小试,结果显示:所分离酵母菌代谢旺盛,发酵能力强,成酒保持了本实训室传统发酵啤酒的风味,可以作为发酵菌种投产。 Beer sediment produced by beer ferment in laboratory was collected to isolate the high-activity beer yeast, then the strain was used to brew. The results showed that the isolated strain had high brewing activity, high speed of brewing,finished product keep strong agreement with our traditional products, As a result, the isolated yeast strain could be used as the ferment strain.
