摘要
饮食是人类物质生活最基本的内容之一。同时,一个地区、一个群体的饮食文化往往是一个地区、一个群体文化的浓缩。因此,喀什维吾尔人的多姿多彩的文化中独具特色的应是饮食文化。喀什维吾尔人的饮食除了伊斯兰性质以外,具有浓郁的民族特色和乡土气息,深受游客青睐,在区内外具有较高的知名度。本文根据田野调查资料,对喀什维吾尔族传统饮食文化及当今发展趋势做一概述。
Food is one of the most basic elements of human substantial life, Simultaneously, the food cul- ture of a region or a group is often a mirror of the re- giunal or group culture. Therefore, the unique part of the Kashgar Uyghurs＇ colorful culture should be their food culture. Beside the Islamic characteristics, the Kashgar Uyghurs＇ food culture has strong ethnic and lo- cal features which attract the tourists, and also well- known inside and outside Xinjiang, According to the fieldwork data, this paper makes a short description about the Kashgar Uyghurs＇ traditional food culture and its cotemporary development tendency.
