甘油含量对玉米醇溶蛋白膜储藏稳定性的影响 被引量:4

EFFECTS OF GLYCEROL CONTENT ON STORAGE STABILITY OF ZEIN FILMS

摘要 制备不同甘油添加量的玉米醇溶蛋白膜,在不同环境温度下储藏24 d,以蛋白膜的抗拉强度和断裂延伸率为指标,研究储藏过程中其机械性能的变化.结果表明:随着储藏时间的增加,玉米醇溶蛋白膜的抗拉强度先增加然后回落,断裂延伸率先降低而后上升.储藏温度较高时,蛋白膜的抗拉强度和断裂延伸率分别呈增大和减小的趋势.综合考虑,甘油含量为0.3 g/g的蛋白膜机械性能的稳定性较好. We prepared zein films with different glycerol contents, then stored the zein films at different ambient temperatures for 24 days, and studied the mechanical properties of the zein films during storage. The results showed that the tensile strength (TS) of the zein films rose first and then dropped, and the elongation at break (EB) dropped first and then rose as the storage time prolonged. At high storage temperature, the TS and EB of the zein films were in an increasing and decreasing trend, respectively. Comprehensively, the zein film containing 0.3 grams of glycerol per gram of zein had high stability in mechanical properties.
