玉米醇溶蛋白酶解制备ACE抑制肽的研究 被引量:20

摘要 研究食品来源的血管紧张素转化酶抑制剂,本实验提取玉米醇溶蛋白,经酸水解后,用木瓜蛋白酶、胃蛋白酶和胰蛋白酶分别进行酶解,酶解产物通过SephadexG-25凝胶层析分离纯化及ACE抑制活性检测。结果表明:三种酶解产物中均含有较强ACE抑制活性组分,其最大相对抑制活性分别为:33.13%、68.36%、48.55%。可研究开发成为具有降血压作用的功能性食品。 To obtain ACE(angiotensin-Converting-Enzyme)inhibitor from protease-digested zein, pepsin, trypsin, papain were adopted separately to digest zein. The hydrolysised products were separated through Sephadex G-25 gel ehromatogram. The separated parts were determined for their ACE inhibitor activity. The results showed that the separated parts of the three protease-digested solution contained stronger ACE inhibitor activity with the strongest relative inhibitive activity of 33.13 %,68.36 %,48.55 % separately. The results lay the foundation for further study on ACE inhibitor and its application.
