摘要
测定白砂糖中的微量淀粉是对白砂糖质量控制,进而是对澄清饮料絮凝问题进行控制的手段之一。本研究采用分光光度计在580nm处测定"淀粉-碘复合物"含量的方法来对白砂糖中微量淀粉进行测定,并用标准加入法验证了方法的准确性,回收率在97%以上,变异系数小于0.02。同时研究了该法的重复性和再现性,采用8个白砂糖样品在4个不同实验室的不同仪器上进行测定,采用柯克伦检验和格拉布斯检验对数据的有效性进行检验,并利用测量系统分析(Measurement Systems Analysis,MSA)对方法进行评价。结果表明,该法测定的准确性高,重复性及再现性均符合要求,可作为内部白砂糖原料验收的检测方法及澄清饮料絮状沉淀控制的验证方法之一。
Measuring the content of starch is one of the methods of controlling the quality of white granulated sugar, for the purpose of controlling the flocculate in clarified beverage. In this study, the content of starch in white granulated sugar was measured by spectrophotometric, testing the content of "starch-iodine complex" in 580nm. The accuracy of this method was verified by standard addition method, of which the recovery was more than 97%, and the variation coefficient was less than 0.02. Besides, the repeatability and reproducibility of this method were studied. 4 instruments in 4 different laboratories were applied in this experiment to test 8 samples of white granulated sugar. The validity of the testing data was analyzed by Cochran test and Grubbs test. Followed that, Measurement System Analysis(MSA) was used for methodolog- ical evaluation. The results showed that this method had high measuring accuracy, and the repeatability and reproducibility were conform to the measuring requirements. So the method can be used in raw material receiving test and the control of flocculent precipitate in clarified beverage in our company.
