摘要
研究铜盐、锌盐、铜锌混合盐腌制鸭蛋时蛋壳斑点的形成情况,以不添加金属腌制剂及蛋壳作为空白组进行比较。分别在腌制后4,7,14,21,28,35 d进行取样,观察记录斑点大小、数量、颜色等,并在试验第4天与第35天结束时采集蛋壳整体的图像。结果表明,锌盐和铜锌混合盐(2∶1,4∶1)腌制的皮蛋壳斑点较少。
This paper studies the influence of copper salt, zinc salt, mixed salt and no-metal salt on duck eggs or duck egg's eggshell, spols during processing. Spots size, number, color, etc. are observedafterpickling4, 7, 14, 21, 28, 35 d, and eggshell overall images are acquired when pickling 4 d and 35 d. The results show that zinc salt or mixed salt containing copper and zinc salt made less spots with 2 : 1 and 4 : 1 ratios.
