摘要
随着低碳经济的出现和发展,各个行业都在以"低碳、环保"作为目标,餐饮业也不例外。"民以食为天,生以食为本",作为"民生产业"的餐饮企业,尽快实施"节能减排、绿色环保"的低碳化管理,对于餐饮业的未来发展和国家低碳目标的实现,具有重要意义。餐饮企业通过采购、生产以及消费环节的管理,有助于一个更持续的餐饮生产与消费系统的建立,也有助于减缓全球温室气体的排放。本文结合中国餐饮企业发展的实际,通过对餐饮企业管理中的采购管理、生产管理和消费管理三个基本环节的低碳化管理方法的探讨,为我国餐饮企业低碳化管理提出具体建议。
With the emergence and development of low carbon economy, all industries including catering industry are in the ＂low carbon and environmental protection＇as the goal. Catering enterprises should implement the low-carbon management as soon as possible, to achieve the future development for the catering industry and national low carbon targets.The management of purchasing, production and consumption of catering enterprises will help to establish a more sustainable food production and consumption system, also helps to reduce global greenhouse gas emissions. In this paper, combined with the development of Chinese catering enterprises and low-carbon management methods, the author put forward specific proposals for low carbon management of catering enterprises in China.
