摘要
黑米啤酒属于保健啤酒的一种,经过对原料进行选择、处理,以及糊化、糖化等工序可得到营养丰富、口感纯正的黑米啤酒。研究表明,在糊化、糖化期间分别添加0.02%的硅藻士可吸附黑米皮的苦涩成分。
The black rice beer is one of the healthy beer, through raw material of selecting, processing, pasting and saccharification process, black rice beer with rich nourishment and pure taste is gotten, during pasting and saccharification, adding 0.02% diatomite can remove undrinkable of black rice skin.
