摘要
研究了以甘蔗糖蜜为原料生产焦糖色素的工艺条件。先除去糖蜜中的灰分及胶体物质,取澄清糖蜜使用,才能获得高质量的产品,使用G409澄清剂,效果满意。作为反应剂的氨基化合物以碳酸铵为宜,它具有成本低、效果好的优点,碳酸铵用量以2%(按原料糖蜜计)为宜。加压法生产焦糖与常压法比较,具有操作方便,避免原料炭化,产品质量稳定等优点。
The technique of ammonium caramel pigment from sugarcane molasses was studied. Removing the ash and colloid in the molasses and then using the clear molasses can obtain high quality product. G409 is a good kind of clarificant. (NH4) 2CO3 is the best amino chemical compound of the several reactant used in this study because of its advantages of low cost and good result. And the best use level of (NH4) 2CO3 is 2% of raw material molasses. Contrast with normal-pressure process, pressurization process has more advantage, such as convenient operation, avoiding carbonization of raw material and stable quality of product.
