摘要
焦糖色素具有着色力强、性质稳定、水溶性好、安全无毒等优点,目前已广泛的应用于食品工业的各个方面。本文综述了焦糖色素的分类,焦糖色素的各种理化性质、生产原料,焦糖色素在肉制品及其他食品中的应用,使用焦糖色素时应注意的问题及今后焦糖色素的发展趋势,旨在为焦糖色素的生产,应用提供一定的理论基础。
Caramel pigment was widely used in various aspects of the food industry for the advantage of stable, water - soluble, safe, non - toxic and so on. The classification, properties, raw materials, application, the problems and future development of caramel pigment were summarized in this paper. Thus it would provide the due theoretical basis for the production and application of caramel pigment.
