摘要 目的了解宜宾市食品中食源性致病菌的污染状况,为评估宜宾市食品污染情况提供依据。方法 2011年采集8类食品204份样品,按照《2011年四川省食源性致病菌监测工作手册》提供的检测方法对沙门菌、金黄色葡萄球菌、志贺菌、单增李斯特菌、大肠埃希菌O157:H7、阪崎肠杆菌6种食源性致病菌和污染指示菌大肠菌群进行检测。结果 2011年204份样品中共检出致病菌7株,总检出率为3.43%(7/204),大肠菌群超标19份,阳性率10.05%(19/189)。其中金黄色葡萄球菌检出2株,检出率0.98%(2/204);单增李斯特菌检出2株,检出率1.34%(2/149);阪崎肠杆菌检出3株,检出率为10.0%(3/30)。结论宜宾市食品中存在食源性致病菌的污染,其中金黄色葡萄球菌、单增李斯特菌、阪崎肠杆菌是宜宾市食源性疾病发生的危险因素。 Objective To research about food borne pathogen contamination situation in Yibin City, and provide a basis for assessing food contamination in Yibin City. Methods Two hundred and four samples of 8 categories were collected in 2011. In accordance with the detection methods in the 2011 Manual of Monitoring and Detection of Food Borne Pathogens in Sichuan Province, six generas of food borne pathogens, namely Salmonella, Staphylococcus aureus, Shigella, Listeria monocytogenes, Escherichia coliO157:H7 and Enterobacter sakazakii and the contamination indicator E. coli were detected. Results Seven strains of pathogen were detected in the 204 samples in year 2011, with total detection rate of 3.43% (7/204), in which 2 strains were Staphylococcus aureus with the detection rate of 0.98% (2/204). 19 samples with over proof E. eoli showed the positive rate was 10.05% (19/189). 2 strains of Listeria monocytogenes were detected with the detection rate of 1.34% (2/149). 3 strains of Enterobacter sakazakii were detected with the detection rate of 10.0% (3/30). Conclusion The Foods in Yibin City exist contamination of food borne pathogens, in which Staphylococcus aureus, Listeria monoeytogenes, and Enterobacter sakazakii are risk factors for food borne diseases.
