摘要
目的 了解某市流通、消费环节主要食源性致病菌的分布特征.方法 采取分层随机抽样法对某市辖区内大型农贸市场、超市及餐馆的食品采样监测,按GB4789进行沙门氏菌、金黄色葡萄球菌、单增李斯特菌等9种食源性致病菌分离鉴定.结果 总致病菌检出率为11.78%;3类采样场所致病菌检出率总体上存在统计学差异(x^2=16.50,P<0.05);多种类样品存在致病菌污染,其中水产品(生食)(31.82%)、生畜(禽)肉(31.25%)、鲜榨果汁(28.57%)污染率较高;检出副溶血性弧菌、金黄色葡萄球菌、沙门氏菌与单增生李斯特菌4类致病菌且其食品污染率存在统计学差异(x2=27.08,P<0.05);水产品(生食)的副溶血性弧菌检出率高于水产品(鲜冻)(P(f)(i)(c)(h)(e)(r')s Exact Test<0.05).结论 应加强食品各环节卫生监管及完善食品卫生的标准.
Objective To study the distributional of major foodborne pathogens in food when circulated or consumpted in a city. Methods A stratified random sampling method was adopted to sample the food from large free market of agricultural products, supermarket and restaurant. A total of 9 species food borne pathogens, such as Salmonella, Staphylococcus aureus, hsteria monocytogenes etc, from the food were isolated and identificared according to GB4789. Results The total contamination rate of food borne pathogens was 11.78%. There was significant difference of the contamination rates in 3 samphng sites(x2=16.50, P〈0.05). Many kinds of sam- ples were contaminated by food borne pathogens.The contaminated rate of aquatic food (omophagia) was 31.82%, livestock (poultry) meat was 51.25%, and fresh squeezed juice was 28.57%. Vihrio parahaemolyficus, Staphylococcus anrens, Salmonella and Listeria monocytogenes were found, and contamination rate had significant difference (X^2=27.08, P〈0.05). The Vibrio parahaemolyticus contamination rate in aquatic products (omophagia) was higher than that of aquatic products (be frozen when fresh)(PFisher's Exact Test〈0-05). Conclusion Food hygiene supervision should be strengthen, and food hygiene standard should be improved.
