β-葡聚糖酶及其在啤酒生产中的应用 被引量:1

摘要 应用在啤酒糖化中的β-葡聚糖酶有改善过滤性能、提高麦汁收得率及降低粮耗等作用。本文对大麦中β-葡聚糖酶在制麦芽和糖化过程中的变化、外源添加微生物β-葡聚糖酶的研究进展及目前国内啤酒酿造用β-葡聚糖酶产品进行了简要的介绍。
