摘要
蛋黄馏油为雉鸡科动物家鸡的卵黄,煮熟后剥取蛋黄,经高温熬炼制得。蛋黄油为用有机溶剂法、萃取法或酶法直接从卵黄中提取得到的油状物质。文章分别综述了近些年来蛋黄馏油及蛋黄油的研究进展,为其开发和利用提供参考。
The egg tar is taken from the boiled egg-yolk stripped from the shell,obtaining brown oily liquid at a high temperature.Yolk oil is extracted and isolated from the egg-yolk directly by organic solvent method,fluid extracted method or enzymatic method.This article summarizes their research progress in recent years,providing a reference for the development and using of egg tar and yolk oil.
