摘要
为了获得高产细胞壁多糖的突变菌株,从成品红葡萄酒中筛选出84株酿酒酵母菌,采用苯酚-硫酸法对84株菌进行细胞壁多糖含量的测定,筛选得到产细胞壁多糖量高于对照菌株得4株酿酒酵母菌,对4株酵母菌进行发酵性能实验和3项耐性实验,试验结果表明,K73菌株含有较高的细胞壁多糖,与对照菌株有显著性差异。在模拟发酵实验中,菌K73表现出显著性优势。
In order to obtain mutant strains with high wall polysaccharide production,84 strains of Saccharomyces cerevisiae were isolated from cabernet.Wall polysaccharide production of these yeasts strains were analysed rate by phenol-sulfuric acid method.Among mutant strains,four strains with higher wall polysaccharide production than the control were selected.The characteristics of vinification properties,tolerance to low-temperature,alcohol and sulfur dioxide of the four strains were investigated.From the analysis,strain K73 was obtained for higher wall polysaccharide production rate and the satisfactory comprehensive fermentation characteristics.
