摘要
合成了六种取代度分别为0.224、0.325、0.446、0.621、0.786、0.998的玉米淀粉硫酸酯,并通过还原力、Fe2+螯合能力、羟自由基及超氧阴离子清除能力四种体外方法评价了其抗氧化能力。结果表明,玉米淀粉硫酸酯具有一定的抗氧化活性,取代度越高,抗氧化能力越强。取代度为0.998的玉米淀粉硫酸酯的浓度分别为1、2、3、2mg/mL时,其还原力为1.013,Fe2+螯合能力为91.6%,羟自由基(.OH)及超氧阴离子(O2-.)清除率为49%、65.8%。因此玉米淀粉硫酸酯凭借其抗氧化性有望应用于食品或药品工业上。
Six corn starch sulfates were synthetized, which degrees of substitution (DS)was 0.224,0.325,0.446, 0.621 ,0.786,0.998,respectively.In vitro antioxidant activities of the six corn starch sulfates were evaluated by four methods, including reducing power, Fe2+ chelating ability, abilities of scavenging hydroxyl and superoxide radicals.Results showed that corn starch sulfates had significant antioxidant activities in vitro and the higher DS,the stronger antioxidant activities. The corn starch sulfates ( DS is 0.998 ) at the concentration of !, 2,3,2mg/mL, reducing power was 1.013, Fe^2+ chelating ability was 91.6%, abilities of scavenging hydroxyl and superoxide radicals were 49% and 65.8%, respectively.Above results suggested that corn starch sulfates had the potential to be used in food or pharmaceutical industry because of their antioxidant activities.
