The Development of Mushroom and Tuckahoe Health Fish-ball

摘要 以低值淡水鱼为主要原料加工传统鱼丸,并将具有营养保健价值的香菇和茯苓添加到鱼丸中,进而开发香菇茯苓保健鱼丸。通过单因素和正交试验确定了香菇茯苓保健鱼丸的最佳配方为:玉米淀粉10%,香菇浆12%,茯苓粉6%,鸡蛋清11%。此产品具有鱼肉鲜味,同时具有香菇特有风味、营养丰富,具有保健功效,特别适合于中老年和儿童人群食用。 Fish-ball was made of low-cost freshwater fish.Explore that adding the mushroom and tuckahoe of nutritious and healthy function into fish-ball to develop mushroom nutritious fish-ball.Single factor and orthogonal design were adopted to research the suitable formula of mushroom nutritious fish-ball.The result showed that the optimized formula was cornstarch10%,mushroom serum 12%,tuckahoe 6%,egg white 11%.The result also showed that mushroom nutritious fish-ball had fish and mushroom fragrance and taste,nutrient-rich,healthcare function,and this kind of product is suitable for the middle-aged and children.
