摘要
将具有营养保健功能的银杏和海带添加到鱼丸中,进而开发银杏海带保健鱼丸。通过单因素和正交试验确定了银杏海带保健鱼丸的最佳配方即玉米淀粉12%,银杏粉为6%、海带浆为6%、鸡蛋清6%。此产品风味独特、营养丰富,具有保健功效,适合于中老年人群食用。
It was added into fish-ball to develop health care fish-ball that gingkgo and kelp with nutrition and health functions.The paper through single factor and orthorhombic test determined the appropriate ingredients of the gingkgo kelp fish-ball,that is 12 % of cornstarch,6 % of gingkgo powder,6 % of kelp serum,6 %of egg white.The result also showed that gingkgo kelp fish-ball has good color-look,fragrance and taste,healthcare function,and this kind of product is suitable for the middle-aged.
