摘要
用超临界ＣＯ_２（ＳＦＥ－ＣＯ_２）流体从干姜中萃取（小试、中试）出姜油，对姜油进行ＧＣ－ＭＳ分析。实验结果表明，姜油含有４９种成分，其中姜的特征成分姜辣素高达２２．９％。ＳＦＥ－ＣＯ_２法萃取姜油能保持生姜特有的风味和辣味，油质量显著提高，该油是食品工业的优质原料。
SFE - CO_2 technology was applied to extract ginger oil from dried ginger. ACJC - MS analysis of this ginger oil was demostracted. The results showed that ginger oil consists of fourty - mine compositions and the ginger -pun- gent - content was up to 22. 9%. This ginger oil could keep the peculiar flavor and pungency of dried ginger it was a high - guality material in food industry
