摘要
采用化学试剂—酶结合分离法,以脱脂米糠制备膳食纤维。分别考察α-淀粉酶用量、酶解时间、碱解浓度、碱解时间对膳食纤维提取率的影响,并采用四元二次回归通用旋转组合试验优化工艺参数。结果表明:在α-淀粉酶用量0.40%,酶解40min,碱解浓度4.00%,碱解时间45min的条件下,从脱脂米糠中提取膳食纤维的得率为39.30%。
Chemical reagents-enzyme separation was utilized to make dietary fiber out of defatted rice bran.Single-variable test examines the amount of α-amylase,hydrolysis time,concentration of alkaline solution, alkali solution time on the extraction rate of dietary fiber,four quadratic regression general rotation combined test optimization of process parameters.Under the condition of the following: A-amylase in the amount of 0.40%,hydrolysis time of 40 min,the solution concentration of 4.00% alkali,alkaline hydrolysis time of 45 min,extracted from the defatted rice bran dietary fiber yield of 39.30%.
