摘要
大豆是重要的植物蛋白和脂肪的营养来源,它不仅含有丰富的蛋白和脂肪,而且富含各种有益的生物活性物质,如:大豆脂肪氧化酶、蛋白酶抑制剂、异黄酮、皂甙、磷脂、低聚糖等。本文综述了大豆在食品加工工业中的各种营养加工作用,以加强人们对大豆的营养特性的重视。
Soybean is the nutritional origination of vegetable proteins and fats,It contains not only much more protein and fat,but also many valuable biological active materials,including soybean lipoxygenase,trypsin inhibitor,isoflavone,saponin,phosphatides,oligosaccharides etc.This paper reviews the role of nutritional processing in the food industry,so that improves the realism about soybean nutritional characters.\;
