摘要
目的了解无锡市南长区2010年餐饮业餐具消毒效果,为卫生监管部门依法管理提供可靠的依据。方法对无锡市南长区餐饮业使用的餐饮具进行分层随机抽样,根据《食(饮)具消毒卫生标准》(GB 14934-1994)要求对抽检的餐饮具进行大肠菌群检测。结果 2010年共抽检餐饮具1 643件,总体合格率较低,仅为76.45%。其中1月份消毒合格率最高(100%),9月份合格率最低(64.29%)。不同规模餐饮单位、不同消毒方法下餐饮具消毒效果均存在显著差别。结论该区餐饮单位的公共卫生安全意识不强,卫生监管部门的管理措施有待加强。
[Objective]To understand the disinfection effect of catering units in Nanchang District of Wuxi City in 2010,and provide reliable evidence for health supervision departments [Methods]The catering units were sampled by stratified random sampling method,and the coliform group was detected and evaluated according to GB14934-1994 Catering Disinfection Standard. [Results]A total of 1 643 samples of tableware were collected in 2010,with the qualified rate of only 76.45%,among which the highest qualified rate appeared in January(100%) and the lowest in September(64.29%).There were significantly differences of disinfection effect between catering units with different scales and different sterile technique. [Conclusion]The public health safety consciousness is not strong in catering units of this district,and the supervisory measures should be strengthened.
