双孢蘑菇气调保鲜工艺优化 被引量:5

摘要 为了获得适宜双孢蘑菇的气调(CA)保鲜工艺,预测不同气调条件下双孢蘑菇贮藏品质变化,对气调贮藏的环境温度、O2浓度和CO2浓度采用二次旋转正交设计进行试验。通过对试验结果进行回归分析和频数选优,得出了双孢蘑菇白度值随贮藏环境温度、O2浓度和CO2浓度变化的回归方程以及适宜的气调贮藏参数组合范围。结果表明:贮藏环境温度对双孢蘑菇贮藏过程白度值影响最大,贮藏温度2.2~2.6℃、O2浓度4.4%~5.3%、CO2浓度15.0%~17.5%的气调环境下贮藏9天,双孢蘑菇仍可保持较好品质。 A quadratic orthogonal rotating combination design was employed to optimize the controlled atmosphere(CA) storage condition of Agaricus bisporus.The independent variables were storage temperature(1.0~5.0℃), concentrations of O2(2.0%~8.0%)and concentrations of CO2(15%~25%),respectively.Through regression analysis, regression equations between the whiteness value and experiment parameters were drawn out.The results of frequency optimization showed that optimum controlled atmosphere preservation conditions for Agaricus bisporus storage were: temperature 2.2~2.6℃,concentrations of O24.4%~5.3%and concentrations of CO2 15.0%~17.5%.
