摘要
雌马酚是大豆异黄酮在结肠中特定微生物作用下的降解产物,具有多种生物学活性。从婴儿肠道中筛选到一株可以降解大豆异黄酮产生雌马酚的厌氧菌株粪链球菌BY-1,研究了肠杆菌BY-2对BY-1的生长和代谢的影响,并对其相互作用机理进行了初步探讨。结果表明,BY-1与BY-2以1:1的接种比例混合培养时,BY-1的产酸量和雌马酚产量都显著高于单独培养时。肠杆菌BY-2代谢产生的酶、有机酸、氢气都可能是促进粪链球菌BY-1生长的因素,BY-1与BY-2之间是偏利关系。为开发含雌马酚保健发酵乳提供了一定的参考价值。
Equol that has many bioactivities is the decomposition product of isoflavones by microbiota in colon. An anaerobic Streptococcus BY-1 that produces equol from isoflavones was obtained. The experiment was conducted to study the influence on growth and metabolism of Streptococcus faecium BY-1 by Enterobacter BY-2 and the relationship between BY-1 and BY-2. It is certified that BY-2 can stimulate BY-1 to produce acid and equol when they were inoculated by 1:1. The various enzymes, organic acid, hydrogen produced by BY-2 play an important role on growth of BY-1. The relationship between BY-1 and BY-2 is called metabiosis. We can utilize this relationship to develop new-typed and hygienical sanitarian milk.
