摘要
紫薯富含花青素类色素和硒元素,其营养价值和应用前景日益引起人们重视。主要阐述了紫薯的营养价值,综述了近年来国内外对紫薯产品的开发情况,同时展望了紫薯中的生物活性成分在医疗保健等方面的应用价值及发展前景。
The nutritional value and application aspects of purple sweet potato have attracted much attention in recent years,because they are rich of anthocyanidins and selenium.This paper is intended to summarize the nutritional value of purple sweet potato and review the progress on developing purple sweet potato.The application and development of bio-active components from purple sweet potato in the medical care are prospected.
