摘要
探索糙米发芽过程中GABA富集的最优工艺,研究浸泡液pH与GABA富集的影响,浸泡温度、浸泡时间与吸水率的关系,以及培养温度、培养时间与发芽率的关系。以GABA含量为指标,选择浸泡液pH、浸泡温度、培养温度和培养时间4因素设计正交试验,确定发芽糙米富集GABA的最优工艺为:浸泡液pH为5.5,浸泡温度为28℃、发芽温度为30℃,发芽时间为24h。
This article deals with the optimum technique of GABA enrichment in the germination of brown rice, the effect of soak solution pH on the GABA enrichment, the relations between soak temperature, soak period and water absorption, as well as the relations between cultivation temperature, cultivation period and germination percentage. Orthogonal test was designed with soak solution pH, soak temperature, cultivation temperature and cultivation period as the factors and GABA content as the index to determine the optimum technique of GABA enrichment in the germination of brown rice, namely, soak solution pH is 5.5, soak temperature is 28℃, germination temperature is 30 ℃ and the germination period is 24 h.
