摘要
蔬菜是重要的维生素C源,了解常见蔬菜中维生素C含量对人们合理补充维生素C具有重要意义。采用碘量法测定了黄瓜,白萝卜,冬瓜和土豆四种蔬菜中的维生素C含量。结果表明:黄瓜的维生素C含量为10.60 mg/100 g,白萝卜为22.50 mg/100g,冬瓜为15.25 mg/100g,土豆为13.82 mg/100g。其中白萝卜中维生素C含量丰富。
The vitamin C content of cucumber,white radish,melon and potatoes were determinated by Iodine titration method.The results showed that the vitamin C content of cucumber was 10.60 mg/100g,the vitamin C content of white radish was 22.50 mg/100g,the vitamin C content of melon was 15.25 mg/100g,the vitamin C content of potato(Solanum tuberosum) was13.82 mg/100g.It was concluded that the vitamin C content of white radish was richer.
