摘要
以水为原料,利用相场模型从微观上对冰晶生长机制进行模拟,结果表明:随着过冷时间的延长,冰晶的分枝逐渐发达;随着过冷度的增高,冰晶的分枝也逐渐发达.表明控制过冷时间和过冷度是冷冻浓缩过程中降低冰晶夹带率的重要措施.
In order to reduce the loss caused by entrainment of ice crystals during freeze concentration,the growth mechanism of ice crystals was simulated at the micro level by phase-field model using water as raw material.The results showed that branches of ice crystals were developing gradually with the increase of freezing time;branches of ice crystals were also developing with the increase of supercooling degree;the control of freezing time and undercooling played an important role in the process of freeze concentration.
