过冷度对冷冻浓缩过程冰晶生长的宏微观研究 被引量:11

摘要 为了降低冷冻浓缩过程因冰晶夹带造成的损失,以过冷度为研究对象,先从宏观上以荔枝汁为原料探讨过冷度对冷冻浓缩冰晶夹带率的影响,再借鉴国内外金属微观结构研究领域非常热门的相场模型,微观上探索过冷度对冰晶组织的形成规律和控制方法,结果表明,过冷度是造成冷冻浓缩冰晶夹带率的重要影响因素之一. In order to reduce the loss caused by entrainment of ice crystals in the process of freeze concentration,the effect of supercooling degree which as object on the entrainment rate of ice crystals were discussed firstly with litchi juices as raw materials at the macro level.Then based on domestic and international field of metal micro-structure of the phase-field model,the law of formation of ice crystals and methods of controlling were explored at the micro level.Thus the result showed that the effect of supercooling degree is an important object on the entrainment rate of ice crystals.
