摘要 采用蛋白酶和纤维素酶两种复合酶处理,对酶液的用量(蛋白酶浓度为8%、纤维素酶为4%),料液比,最适pH值,反应时间进行单因子和正交试验.确定了复合酶法提取香菇多糖的最佳工艺为:料液比1∶25,pH值4.8,酶液量0.35ml(蛋白酶浓度为8%、纤维素酶为4%),反应时间1.5h,多糖提取率为15.13%,比起传统水提法有大幅提高. By processing protease and cellulase and conducting mono-factor and orthogonal tests on the volumes(8% proteasem.4% cellulase),the proportion of the feed liquor,the pH optima and the reaction time of the enzyme,it can be concluded that the best formula and ratio for extracting polysaccharide from complex enzyme is 1 protease to 25 cellulase,with a 4.8 Ph,0.35Ml liquid enzyme,1,5hours'reaction time and an extraction rate of 15.13% which is much more effective than traditional water extraction method.
