摘要
为促进华鲮资源的合理开发利用和养殖生产的发展,对华鲮肌肉脂肪酸的组成及营养成分进行了分析。结果表明:华鲮肌肉中含有12种脂肪酸,其中,饱和脂肪酸有5种,不饱和脂肪酸有7种。饱和脂肪酸的质量分数占脂肪酸总质量分数的29.29%,不饱和脂肪酸的质量分数占脂肪酸总质量分数的70.70%,其中单不饱和脂肪酸的质量分数占脂肪酸总质量分数的50.56%,多不饱和脂肪酸的质量分数占脂肪酸总质量分数的20.14%。华鲮肌肉脂肪酸主要由C18:1、C16:0和C18:2 n-6脂肪酸组成,这3种脂肪酸的质量分数总和占脂肪酸总质量分数的81.45%。
The fatty acid composition and nutrition components of Sinilabeo rendahli was determined to promote rational exploration and exploitation of Sinilabeo rendahli resource and aquaculture production development.The results showed that there were 5 saturated fatty acids and 7 unsaturated fatty acids in muscle of Sinilabeo rendahli,the saturated fatty acid and unsaturated fatty acid content accounted for 29.29% and 70.70% of total fatty acid content respectively,the monounstatuated fatty acid and polysaturated fatty acid content accounted for 50.56% and 20.14% of total fatty acid content separately,the fatty acid in muscle of Sinilabeo rendahli was mainly composed of oleic acid,palmitic acid and linoleic acid and these fatty acids content accounted for 81.45% of total fatty acid content in muscle of Sinilabeo rendahli.
