摘要
为了解长臀鮠的营养价值,对其肌肉脂肪酸的组成成分进行了分析。结果表明:长臀鮠肌肉中含有11种脂肪酸,其中,饱和脂肪酸4种,不饱和脂肪酸7种。饱和脂肪酸的质量分数占脂肪酸总质量分数的33.96%,不饱和脂肪酸的质量分数占脂肪酸总质量分数的66.03%,其中,单不饱和脂肪酸的质量分数占脂肪酸总质量分数的50.49%,多不饱和脂肪酸的质量分数占脂肪酸总质量分数的15.54%。长臀鮠肌肉脂肪酸主要由C18:1、C16:0和C18:2n-6脂肪酸组成,这3种脂肪酸质量分数总和占脂肪酸总质量分数的80.44%,C18和C16脂肪酸含量最高。长臀鮠肌肉脂肪酸种类组成与其他几种鱼类有明显差异。
The composition of muscular fatty acid was analyzed for Cranoglanis bouderius to study its nutritional value. The results showed that there were 11 fatty acids in the muscle of C. bouderius, among them, 4 were saturated fatty acid, and 7 were unsaturated fatty acid. The quality score of saturated fatty acid was 33.96%, and unsaturated fatty acid was 66.03%, monounsaturated fatty acid was 50.49% and polyunsaturated fatty acid was 15.54% among them. The muscular fatty acid was composed of 3 main fatty acid, C18 : 1, C16 : 0, and C18 : 2n-6, and all of their quality score was 80. 44% in the total score, C18 and C16 fatty acid were higher among them. Also, the composition of muscular fatty acid of C. bouderius was obviously different with other commercial fishes.
