东北地区青豆和青豆油的产生原因及品质分析 被引量:6

Cause and quality analysis of immature soybeans and green soybean oil in northeast China

摘要 以东北地区青豆和青豆油为原料,对青豆和青豆油的产生原因和品质进行了分析。结果表明,青豆的脂肪含量和百粒重分别为13.6%和11.1 g,明显低于成熟大豆;青豆原油色泽为黄70红4.4灰0.1,四级青豆油色泽为黄70红4.2灰0.1,高于普通大豆油;青豆原油含磷量为229.5 mg/kg,对精炼脱胶造成较大负担。 The immature soybeans and its oil(green soybean oil) in the northeast China were used as test materials,and their cause and quality were analyzed.The results showed that the content of fat and hundred-seed weight of the immature soybeans were 13.6% and 11.1 g,which were lower than those of mature soybeans.The color of crude green soybean oil was Y70,R4.4,G0.1,the color of the four-grade green soybean oil was Y70,R4.2,G0.1,both were darker than those of normal soybean oil.The phosphorus content of 229.5 mg/kg in the crude green oil was a burden for degumming.
