摘要
对玉米皮膳食纤维进行超微粉碎改性处理,研究其水不溶性膳食纤维的含量、吸水性、吸油性与阳离子交换能力的变化。实验结果表明,超微粉碎几乎不改变玉米皮膳食纤维中水不溶性膳食纤维的含量,而粉碎细度并不是越细越好,当细度控制在160~200目时,其吸水性、吸油性与阳离子交换能力均有明显改善。
The corn bran dietary fiber for ultra-fine powder modification,study the water-insoluble dietary fiber content,water absorption,oil absorption and cation exchange capacity changes.Experimental results show that ultra-fine powder is almost no change in corn bran insoluble dietary fiber content of dietary fiber.The fineness is not crushed finer the better.When the fine degree of control in 160 ~200 mesh,its water absorption,oil absorption and cation exchange capacity showed significant improvement.
