摘要
目的改善酵母葡聚糖的溶解性能,探讨增溶后酵母葡聚糖的生物学活性。方法以酵母葡聚糖为原料,经过碱性蛋白酶处理得到水溶性葡聚糖,然后进行抗氧化活性和抑制血管紧张素转换酶I(ACE)活性的研究。结果酵母葡聚糖水解液在邻苯三酚自氧化发光体系中对O2.-的清除和对ACE的抑制均成剂量依赖关系,它对O2.-的半抑制浓度为0.55mg/mL,对ACE的半抑制浓度为0.16mg/mL。结论酵母葡聚糖经水解增溶后得到的水溶性葡聚糖具有良好的抗氧化活性和ACE抑制活性。
Purpose To improve the solubility of the yeast glucan and to explore the biological activities of the soluble glucan.Methods The soluble glucan was obtained through hydrolysis of the yeast glucan with alcalase.Antioxdant activity and angiotensin I-converting enzyme (ACE) activity of the hydrolysate were assayed.Results Scavenging effect on superoxide anion free radical (O2·-) produced from the self-oxidation method of Pyrogallol and inhibiting effect on ACE exhibited a dose-dependent relationship,with IC50 values of 0.55 and 0.16 mg/mL,respectively.Conclusion The soluble glucan had good antioxidant and ACE inhibitory activity.
