摘要
对两个玉米品种在不同水分条件下进行模拟储藏,定期测定玉米中脂肪酸、蛋白质的变化及微生物活动情况.结果表明:低水分玉米微生物代谢活动弱,水分含量15%以上的高水分玉米中微生物活性值在第10天开始明显上升,在50 d时,活性值高出低水分玉米10倍以上.储藏期玉米脂肪酸值呈上升趋势,水分越高,上升越快,水分含量15.4%的玉米脂肪酸值在第20天时上升趋势开始加快.水分含量15.4%的玉米水溶性蛋白含量在储藏期变化明显,而盐溶蛋白含量相对稳定,当水分含量升高至18%以上时,两种蛋白含量都会发生较大变化.低水分玉米中醇溶蛋白含量变化不大,而水分含量为18.5%的玉米在储藏20 d醇溶蛋的含量开始迅速下降,60 d后其含量下降了22%.
The article performed stimulated storage of two corn varieties under the condition of different moisture contents,and periodically determined the change of protein and fatty acid as well as the microbial activity in the corn.The results show that microbes in low-moisture corn have weak metabolic activity;the activity value of microbes in high-moisture corn(moisture continent higher than 15%) increases remarkably in the 10th day,and is more than 10 times that of the low-moisture corn;the fatty acid value of the stored corn increases gradually,and the increase speed is in direct ratio with the moisture content;the fatty acid value of corn with 15.4% moisture content increases greatly in the 20th day;the content of water-soluble protein in the corn with 15.4% moisture content changes remarkably in the storage period,but the content of salt-soluble protein keeps relatively stable,and the contents of the two proteins change greatly when the moisture content increases to above 18%;the contents of alcohol-soluble protein in low-moisture change little,but the contents of the alcohol-soluble protein in corn with the moisture content of 18.5% decrease rapidly when stored for 20 days and decrease by 22% after stored for 60 days.
