摘要
采用纤维素酶和果胶酶组成的复合酶系提取了猴头菇多糖.先由单因素试验确定酶解工艺条件,再由正交试验进一步优化提取工艺,最终确定提取猴头菇多糖的最佳工艺条件为pH 4.2、温度50℃、酶解时间90 min、加酶量2.0%,此条件下多糖浸提率为4.38%.与其他方法比较,酶法浸提简单快捷且多糖浸提率高.
Polysaccharide of Hericium erinaceus was extracted by use a compound enzyme composed of cellulase and pectinase(mass ratio 1∶2).The process conditions of enzymolysis were determined by single factor test and then optimized by orthogonal test.The optimum process conditions were determined as follows: pH 4.2,temperature 50 ℃,reaction time 90 min and mass fraction of enzyme 2.0% reaction.Under the optimum conditions,the polysaccharide extraction rate was 4.38%.In comparison with other methods,enzymatic extraction is simple and fast and has high extraction rate.
