The content of protein, fat, trace elements and vitamins in wild Hericium erinaceus are determined. The kinds of amino acid and fatty acid are analyzed. The results show that there are 7 amino acids human being need; the content of the nonsaturated fatty acid is relatively high; the content of viatmin C is 698 mg/100g in wild Hericium erinaceus.
