Optimization of the experimental conditions inhibit microbial in bullacta exarata by response surface methodology

摘要 利用SAS中响应面分析方法,对茶多酚等防腐剂在泥螺中微生物抑制作用进行研究,以菌落总数为响应值作响应面和等高线图。结果表明,初始菌数为450cfu/g的泥螺,添加茶多酚等防腐剂后,放置于5±1℃下贮藏,9d后观察,经过优化后,抑制其菌落总数的最佳条件为0.36%的茶多酚,0.028%的乳酸链球菌素和0.03%的溶菌酶,此时菌落总数最小值约为530cfu/g。并对优化条件做验证试验,得到同样条件下菌落总数为560cfu/g,与预测值接近,表明模型拟合度好。 This paper is a study in inhibiting microbial in bullactra exarata by response surface methodology, such as tea polyphenol, and three-dimensional plot and corresponding contour plot in response to total bacterial count are made. The results show that: after 9 d storage in the condition of temperature about (5±1) ℃, which the initial number is 450 cfu/g, the best conditions in inhibiting are 0.36% tea polyphenol, 0.028% Nisin and 0.03% lysozyme, and minimum number is 530 cfu/g. And verification test is done by the optimization conditions. The result of total bacterial count is 560 cfu/g, which close to predictive value, so the model fits good.
