摘要
综述了小麦籽粒蛋白质、蛋白质组分的形成过程以及氮代谢关键酶在氮素积累、转运和再利用过程中的作用,阐述了小麦氮肥施用量和施用时期对小麦蛋白质品质、蛋白质组分品质及小麦加工品质的影响,以期为小麦高产优质栽培提供一定的理论依据。
The forming process of wheat grain protein and its components and the roles of key enzymes activities of nitrogen in nitrogen accumulation,translocation and reutilization were reviewed.The effects of nitrogen application amount and time on wheat protein quality,protein components quality and wheat processing quality were introduced in order to provide the theoretical foundation for wheat high yield and high quality cultivation.
