摘要
综述了淀粉中的水对淀粉颗粒结构和性质的影响,及其研究历史和发展现状。详细论述了水在参与淀粉颗粒结晶过程中的作用,水分对于淀粉颗粒结晶性质和糊化回生过程的影响。
The history and development of the influences and functions of water on starch granule structure and property weresummarized in this paper. The effects of water on the crystallization process of starch granule,and the influences of water onthe crystalline properties and retrogradation process of starch granule were discussed in detail.
