纳米微囊化水溶性叶黄素稳定性的研究 被引量:10

摘要 从植物中提取的叶黄素不溶于水,经纳米级改性、微囊化包埋后,具有水溶性质。通过pH、温度、光照3个因素考察纳米级水溶性叶黄素的稳定性,确定其稳定环境为弱酸性,遮光、低温保存。在此环境下,将纳米级水溶性叶黄素配以牛磺酸、VC、菊花、糖等辅料制成具有改善视力、提高机体免疫力功效的保健饮料产品,考察产品稳定性,与纯叶黄素水溶液比较,常温放置1个月后,叶黄素的保存率从20.6%提高到90%,常温6个月内产品叶黄素含量≥3mg/500mL。 The lutein distilled from plants which doesn't dissolve in water can be water-dissolved after we change the character by nano-modified and micro-encapsulated. It is found that this kind of lutein can be stable in weak acid, shading and low-temperature environment if we consider about the three factors (pH, temperature and light) only. We made a healthy beverage under this environment, using the water-dissolved lutein and some other accessories like taurine, vitamin C, chrysanthemum, sugar and so on. The product can improve men's vision and enhance the effectiveness of the body's immune system; its content of lutein can still be 90% after 1 month deposited in room temperature, compared to 20.6% in the product using the pure lutein water solution, which means the nutrition has been well preserved. After 6 months under the same environment, the content of lutein is more than 3 mg/500 mL.
