开菲尔奶抑制肠道致病菌、降胆固醇及调节免疫功能研究 被引量:6

摘要 研究了开菲尔奶、人工酸化奶以及普通发酵酸奶对肠道致病菌抑制、调节血清胆固醇以及机体免疫功能的效果。开菲尔奶上清液对大肠杆菌、枯草芽孢杆菌及金黄色葡萄球菌表现出良好的抑制性,且对革兰氏阳性菌抑制效果强于革兰氏阴性菌;作用时间可达8~24h;以小鼠为动物模型,灌胃开菲尔奶为实验组,脱脂奶为对照组的实验结果表明,实验组小鼠血清总胆固醇、高密度脂蛋白LDL浓度显著降低,血清中LDL和HDL浓度可以得到有效调节,且小鼠患动脉硬化风险指数(TC/HDL)低于对照水平;开菲尔发酵奶可以显著提高正常小鼠以及高胆固醇小鼠血清抗体IgG水平到13.7 mg/g。这些数据表明,饮用开菲尔奶可以对宿主产生明显的益生作用。 To investigate kefir supernatants(KS), artificially acidified milks supernatants(AAMS), yogurt supematants(YS) on inhibitory the effect of intestinal pathogenic bacteria, cholesterol-reducing and immunity-reinforcing. Compared with AAMS, YS, KS had great effective inhibition of Escherichia coli and Bacillus subtilis, Staphylococcus aureus, kefir supematants can availably restrain the reproduction of E. coli, and its inhibition can be maintained 8-24h; AAMS had determinate inhibitory action, but the effectiveness of bacteriostasis could hold 8 days; YS had no significant depressant effect on E. coll. To mice for animal models, oral administration of milk kefir for the experimental group, skimmed milk as a control group. The results showed that: Compared with the control group, the mean values of experimental group for mice serum TC, LDL concentrations decreased significantly (P〈0.05), serum LDL, HDL content can be effectively regulated. The risk of atherogenic index (TC/HDL) of the test mice is lower than control group. Kefir milk can significantly improve the normal mice and the high cholesterol test mice serum antibodies IgG levels to 13.7 mg/g (P〈0.05). These data suggest that drinking milk kefir can generate obvious prebiotics role on host.
