摘要
以马来酸酐、葡萄糖为原料经3步合成了新型防腐剂富马酸葡萄糖乙脂。经红外光谱确定产品结构。抑菌效果实验表明,富马酸葡萄糖乙脂对常见细菌、霉菌、酵母菌的抑制作用较强,可以有效抑制牛奶酸败混合物,效果优于山梨酸。
Glucosyl ethyl fumarate was synthesized through three steps with maleic anhydride and glucosy as raw materials. The structure is identified by infrared spectrometry. The results of antimicrobial study show that the inhibition from the growth of common bacteria, yeast and mold by glucosyl ethyl fumarate is remarkably strong. Moreover, it can effectively prolong the adaptive phase of milk spoilage bacteria and decrease the growth quantity, with an effect better than sobic acid.
