摘要
合成出一种具有α,β-不饱和羰基结构的新型非对称二酯—富马酸糠醇甲酯,并对其抗菌活性进行研究,结果表明:糠醇甲酯可以显著抑制牛奶酸败菌,有效延长酸败菌的生长适应期,降低绝对生长量,缩短生长稳定期并有效诱导微生物细胞自溶,而且效果显著优于苯甲酸钠,是一种值得大量开发应用的新型抗菌剂。
In this article a new asymmetrical ester containing α,β-unsaturated carbonyl group structure was prepared, and its antimicrobial activity was studied. The results showed that it could inhibit the growth of milk spoilage bacteria remarkably. And it could effectively prolong adaptive phase of bacteria, reduce growth quantity, shorten stable phase and significantly induce the autolysis of bacteria. Furthermore its antimicrobial activity was better than sodium benzoate. These suggested it was a new preservative worth of developing and applying largely.
