摘要
日本十分重视对清酒保健功能的研究,并且证明清酒具有预防癌症、心脏病、高血压、糖尿病、健忘症、骨质疏松等症的作用。而在我国关于黄酒的保健功能研究才起步,目前初步探明,古越龙山绍兴黄酒中富含酚类、低聚糖、γ-氨基丁酸和生物活性肽等功能因子,具有增强学习记忆能力、增强免疫能力、预防骨质疏松等多种保健功能。进一步加强对黄酒保健功能的研究和宣传,将大力推动我国黄酒产业的发展,须要引起足够的重视。
The study on health care functions of Japanese sake was high valued in Japan. It was gradually proved that Japanese sake had effect on the prevention of cancer, heart disease, hypertension, diabetes, amnesia and osteoporosis etc. In China, the research on health care functions of Chinese rice wine was newly started, and it was preliminarily proved that the Guyue Longshan Shaoxing rice wine was rich in polyphenols, oligosaccharides, γ-aminobutyric acid and bioactive peptides and other functional factors, which could enhance learning and memory capacity, enhance immunity and prevent osteoporosis. The more and more study and publicity of the healthy function of Chinese rice wine would vigorously promote the development of Chinese rice wine, which should be paid sufficient attention.
