摘要
采用碘量法、TBA法、DPPH法等研究了福建黄酒的抗氧化活性,并对其中可能含有的抗氧化活性物质进行了分析。结果表明:福建黄酒能在一定程度上抑制脂质过氧化反应和亚油酸的氧化,对DPPH自由基有一定的清除作用。结论:福建黄酒中存在一些具有较高抗氧化活性的物质。
The antioxidative activity of Fujian Yellow Rice Wine was measured by Na2S2O3-I2 titrimetrie method, TBA method and DPPH free radical method, respectively. The probably contained substances with antioxidative activity were analysed at the same time. It was found that Fujian Yellow Rice Wine can inhibit the lipoperoxidation and the oxidation of TBA to some extent, which also has a scavenging effect on the DPPH radical. Results showed that Fujian Yellow Rice Wine does exist some substances with high antioxidative activity.
