摘要
本文研究了紫外线辐射对酿酒葡萄品种蛇龙珠果皮中白藜芦醇及其二聚体合成的影响。研究结果表明,紫外线辐射300 s,在35℃下黑暗中贮存24 h后,可明显提高果皮中白藜芦醇及其二聚体含量。紫外线辐射对不同发育期果皮中白藜芦醇及其二聚体含量的影响并不相同,对白藜芦醇含量来说,果实转色期时紫外诱导效果最好;对白藜芦醇二聚体而言,不同时期的紫外诱导效果差异不显著。紫外线辐射均能提高苯丙氨酸裂解酶和过氧化物酶活性,且苯丙氨酸裂解酶活性与果皮中白藜芦醇的形成之间存在相关性,过氧化物酶活性与果皮中白藜芦醇二聚体的形成存在相关性。
The effects of ultraviolet irradiation on the accumulation of resveratrol and δ-viniferin as well as related enzymes in the pericarp of V. vinifera were studied in this paper. The contents of resveratrol and δ-viniferin in the pericarp of V. vinifera could be increased after UV irradiation for 300 s and then stored in the dark for 24 h at 35 ℃. UV irradiation had a significant effect on the content of resveratrol at coloring period of grape berry, while had no obvious effect on the content of δ-viniferin at different development periods of grape berry. The relationships between resveratrol, δ- viniferin and phenylalanineammonia-lyase (PAL) , peroxidase (POD) were studied during the development of grape berry. The results showed that the ultraviolet irradiation could significantly increase the activities of PAL and POD. There were positive relationships between PAL activity and the forming of resveratrol as well as between POD activity and the forming of δ-viniferin in the periearp of V. vinifera.
