摘要
发酵蛋白是将动、植物蛋白原料接种微生物,发酵处理后得到的一类蛋白质饲料。通过发酵,可有效降解或消除原料中存在的抗营养因子,提高饲料营养价值。发酵产物应用于水产饲料,可部分替代鱼粉使用,降低饲料生产成本,并对水产动物的生长、消化吸收、免疫机能具有一定的改善作用。综述了发酵蛋白的生产工艺、特点,及在水产饲料中的应用现状,并指出了今后的研究发展方向。
Fermented protein is a newly developed protein feedstuff, which is produced by adding microbe in plant or animal protein resource, to ferment with proper pH, temperature and time. After fermentation, antinutritional factors in the raw materials were destroyed and the nutritional value was improved. The application of fermented protein in aquatic feeds, leads to partially replace fish meal in diet, decrease diet cost and improve the growth, digestibility and immune response of aquatic animals. This article reviewed the production and characters of fermented proteins and their application in aquatic feeds. The research direction in the future was also pointed out in this article.
