摘要 自贡盐帮菜是川菜的重要支柱,其形式多样,类型丰富多彩。目前,自贡盐帮菜究竟分为哪些类型,还众说纷纭。而自贡盐帮菜分类的研究,对收集、整理、研究、开发利用自贡盐帮菜有着重要意义。本文力图从自贡盐帮菜的发展历程,形成原因等去探寻自贡盐帮菜的类型,并试图提出一个较为合理的分类方案。 The Zigong salt gang's dish list was a major pillar of Sichuan food and its various types were very rich and colorful. At present, actually, opinions vary for that Zigong salt gang's dish list could be divided into which types, so it is very important to study its classification, to collect, coordinate, open up and utilize them. This article tries to probe into the classification of Zigong salt gang's dish list from its developing history, reason of its formation and also attempts to propose a reasonable classified plan.
